The Winery
Since 1913, our cooperative winery has proudly contributed to the reputation of Provence wines. Nestled in the heart of Green Provence, in the Var region, our estate draws on a long-standing winemaking tradition and an exceptional terroir.
We produce wines under the AOP Côtes de Provence, AOP Coteaux Varois en Provence, and IGP Var labels, thanks to the passion and expertise of over 60 dedicated winegrowers. Their collective effort allows us to express the full character of our land and traditions.
By combining respect for heritage with modern innovation, we’ve continually invested in advanced equipment to craft wines that meet today’s quality standards and customer expectations. Whether rosé, white, or red, our wines embody our unwavering commitment to excellence.
Our Commitments
At Les Caves du Commandeur, sustainability is part of our DNA. For generations, our winegrowers have cultivated their vineyards with a deep respect for nature.
In 2019, we began the High Environmental Value (HVE) certification process — a distinction that highlights environmentally conscious agricultural practices. This certification focuses on four key pillars:
• biodiversity preservation
• responsible plant protection strategies
• controlled fertilization
• sustainable water management
In practical terms, this means maintaining biodiversity zones that foster local fauna, flora, and beneficial insects — ensuring a balanced ecosystem.
Today, over 90% of our vineyards are certified Organic or HVE, underlining our commitment to a responsible and sustainable viticulture.
In parallel, we actively promote bottle reuse and are engaged in a broader CSR (Corporate Social Responsibility) initiative proving that environmental care and community values go hand in hand.

Our Designations
Our wines are produced under three key French geographical designations: AOP Côtes de Provence, AOP Coteaux Varois en Provence, IGP Var. These official classifications guarantee the geographic origin, authenticity, and typicity of our wines. They also uphold time-honored winemaking practices and reflect the richness of Provence’s Mediterranean terroirs.

AOP Côtes
de Provence
This prestigious designation covers red, white, and rosé wines that express the soul of the Provençal landscape. Subject to strict production guidelines, our AOP Côtes de Provence wines are known for their consistency, elegance, and balance.
Thanks to ideal Mediterranean conditions and careful vineyard management, our wines reveal fruity and spicy aromas, often enhanced by subtle floral notes.

AOP Coteaux Varois
en Provence
Located in the heart of Provence’s limestone region, this vineyard benefits from a unique climate: mild springs and autumns, hot summers, and cold winters. These variations produce expressive, elegant wines with aromatic complexity. Expect a rich bouquet of citrus, exotic fruits, sun-ripened stone fruits, and fresh red berries.

IGP
Var
The IGP Var label offers more flexibility in grape selection and winemaking techniques, allowing our growers to adapt to each plot’s specific characteristics — while maintaining regional identity. This designation gives rise to a wide variety of profiles: from light, refreshing wines to more expressive, fruit-forward cuvées that showcase the diversity of the Var terroir.




Our Wines
We create wines to suit every taste — from seasoned wine lovers to curious newcomers. Each of our cuvées reflects the character of the Provençal soil and grape varieties, with something unique for every occasion.
Rosé Wines
Our rosés are light, crisp, and aromatic — a true signature of the region. Crafted mainly from Cinsault and Grenache, they reveal subtle aromas of red berries, white flowers, and citrus.
Perfect with seafood (like sea urchins or violet clams) and Provençal specialties such as ratatouille, barigoule artichokes, or stuffed vegetables, these wines are the embodiment of Mediterranean freshness.
- AOP Côtes de Provence and Coteaux Varois rosés: refined, elegant, and lively.
- IGP Var rosés: fresh, intense, and perfect for relaxed, sunny meals.
White Wines
Our white wines are primarily made from Rolle (Vermentino), a variety well-suited to Provence’s climate. These wines are a perfect match for seafood, grilled fish, or as a refreshing aperitif.
Some cuvées are aged in barrels, adding greater depth and pairing wonderfully with white meats, truffle-based dishes, or goat cheeses.
Serve chilled between 6–8°C to fully appreciate their balance of freshness and complexity.
Red Wines
Our red wines reflect the richness of our terroir and are crafted from classic Mediterranean grapes: Syrah, Grenache, Cabernet Sauvignon, and Cinsault.
- Young reds: fresh and fruit-forward, ideal with herb-seasoned grilled meats, white meats, lamb, or Provençal vegetable dishes.
- Aged reds: structured and powerful, perfect for game, stews, and strong cheeses. Serve at 14–16°C for young reds, 16–18°C for aged wines.

Modern and welcoming, our Montfort boutique is located within our production site. Easily accessible, it offers a broad range of wines and educational materials. Just off the Verdon trail and near Cotignac, it’s an ideal stop to learn more about our terroir.

Salernes
Our Salernes shop is dedicated to wine tasting and retail, with a complete collection of rosé, white, and red wines. Set in a charming Provençal setting, it’s perfect for discovering the regional character of our AOP Côtes de Provence and IGP Var wines.

Brignoles
